Dance, Move, Happy Nancy has been one of the most popular instructors the Lake Oswego Adult Community Center (ACC) has ever had. Some people don’t know that she was also the ACC Manager back in 1995. Prior to that she worked with Portland Bureau of P&R as their Senior Leisure Services manager and taught exercise classes throughout Portland. “My interest in leading exercise classes happened in my twenties after reading a book titled, Sixty-Plus And Fit Again, written by Magda Rosenberg M.D. This beautifully written book was ahead of its time and inspired me to organize and teach exercise classes for older adults. Dancing, moving and keeping active have been my personal key to happiness. To be able to share this with others is such a gift to me. So here I am well into my 60s still dancing, laughing and moving with my fellow participants. Life couldn’t be any better.” Nancy is also an accomplished artist and has instructed art classes as well. “I count on Nancy’s class to get my day started!” ~ Class Participant Monopoly, Re-Careering, Protest Since the tender age of 20, Barb had an interest in fitness. But raising a family and then work took her in a different direction. Finding a need to re-career after working in the finance field, Barb returned to her dream three years ago and applied for the Fit Technology/ Gerontology Healthy Older Adult Fitness certificate program at Portland Community College. She found she was an avid student and well-liked by her peers. During an internship with a neighboring center, she was invited by Cultural Supervisor Kelliegh Bradley to lead a Boomer Boot Camp at the ACC. It was so popular that when students learned there might not be enough room to have the class one session, participants threatened an all out protest at the ACC front desk! And no wonder. Barb has brought the fun into her fitness class with Monopoly-style games and use of a variety of fitness equipment. “I love what I do!” enthuses Barb. “I decided to work with the healthy older adult community because I wanted to work with people my age who want to stay healthy, get fit and enjoy life. It is a real joy to be given the opportunity to be working with them at LOACC!!” “Boomer Boot Camp changed my life!” ~ ACC Participant Day Trippers Lunch at The Grant House & Tour of Marshall House After lunch at The Grant House, tour the elegant Queen Anne Victorian home on Officers Row and learn the history of General George C. Marshall’s time there. General Marshall served as Secretary of State and Defense and was awarded the Nobel Peace Prize. Lunch on Your Own. Lunch on your own. 2p Su 2/22 Sara, Head Chef at the ACC Congratulations to Sara Schrader - recently promoted to ACC Head Chef. Sara is not new to the ACC, she has been the Cook’s Assistant in the commercial kitchen since 2008. Sara, trained in Culinary Arts in Astoria, Oregon, has worked at the Abernathy Center and area bakeries. She also works as a cake decorator where her designs won first place prizes at the Oregon State Fair. In addition to being an expert baker, Sara also enjoys travel. For the past three years, Sara has been making the main course at the ACC, so the taste and quality of the food will remain the same. She does have some great ideas about regional cooking and increasing the ACC’s use of fresh products from Luscher Farm. Sara brings great energy and passion to this position. You are invited to a special Mardi Gras meal that she created featuring Chicken Jambalaya and Jalapeño Cornbread (see recipe on page 2), and the traditional King’s Cake for dessert. Day Trip Refund Policy: There are no refunds for day trips that include expenses prepaid by the Adult Community Center unless a replacement participant can be found. All other day trips may be canceled with a refund up to five working days prior to departure. A $5 cancellation fee will be deducted from the refund. In the event that the Center cancels a trip, a full refund will be given. Heat oven to 400°F with the skillet inside. In a large bowl whisk together the yogurt, milk and egg. Pour into the bowl of dry ingredients and stir to combine. Stir in the melted butter, the chopped jalapenos, corn and cheese. Once the oven has reached 400°F and the skillet is hot, carefully remove the skillet from the oven. Pour the cornbread batter into the skillet and smooth the surface with a wooden spoon or spatula. Return the skillet to the oven and bake for 20-25 minutes, until lightly browned on top and skewer inserted into the center comes out clean.
