ONLINE: Understanding Eating Disorders

Eating disorders are serious mental health conditions that impact your physical, emotional, and social well-being; 9% of the US population will experience one in their lifetime so it’s important to stay informed as eating disorders affect people of all ages, genders, and ethnic backgrounds.
In this presentation, we'll explore:
- Warning signs and symptoms
- What puts an individual at risk for an eating disorder, including how we talk about food and body image
- How eating disorders relate to other mental health issues like anxiety and depression
- How to have a conversation with someone you're concerned about
- Resources for help
With more than 22 years of experience as a registered nurse, Erin M. Lundeen, DNP, RN, CSN has built a career dedicated to compassionate care, lifelong learning, and service to others. Her clinical background spans intensive care, emergency nursing, long-term care, and school nursing—experiences that shape both her teaching and her commitment to supporting the well-being of patients, families, and healthcare providers.
For the past six years, she has served as a Clinical Assistant Professor at St. Bonaventure University, where she teaches across a wide range of nursing specialties, including community health, pediatrics, medical-surgical nursing, advanced pathophysiology, and emerging topics in AI and informatics. She is also actively pursuing her degree to become a Psychiatric-Mental Health Nurse Practitioner, expanding her ability to serve individuals and families with comprehensive mental health care.
Her personal journey—including supporting her daughter through an anorexia nervosa diagnosis in 2022—deepened her dedication to mental health advocacy and to advancing research focused on mindful self-compassion. Her work explores how nurses and caregivers can cultivate greater resilience and joy in both their professional and personal lives. A mother of three, Erin is passionate about teaching her teenage children these skills as well.
Deeply rooted in her community, Erin serves on the board of a local initiative to build a children’s museum in her hometown and volunteers with the National Eating Disorders Association (NEDA), offering guidance and hope to families navigating similar experiences.
